Inspector's notes

Upon entry, observed several stacks of single use packaging and a lantern placed over and around the hand sink. Floor in front of sink was also blocked by propane tank and boxes. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC relocated all items blocking handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

PIC was cooking from raw on unit but did not have thermometers on unit at time of inspection. Properly calibrated probe thermometers are required at all times for monitoring food temperatures.
