At the time of the inspection there were boxes of paper plates, napkins and boxes of plastic cups placed in the handwashing sink for storage. The handwashing sink shall be maintained so accessible at all times and not used for other purposes than handwashing. Operator removed items from the handwashing sink. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed sliced ham, sliced cheese and hot dogs with an internal temperature ranging from 48*F-49*F. Per operator the food items were placed in the standing fridge thirty minutes prior to inspection. Instructed operator to place the food items in the freezer to get down to the correct temperature. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
