Per PIC, temperatures were taken 2 hours prior and TCS food items were 41*F or below. PIC is taking TCS food offsite to rapidly cool to 41*F or below. Consecutive repeat violation: 2nd. PIC stated the TCS food items were prepared at the commissary 30 minutes prior. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
