Inspector's notes

Observed a full hotel pan of cut ribs stacked on top of one another in a steam table at 120*F. Operator was informed that hot food needs to be kept at or above 135*F, and storing stacks of cut ribs like this will lead to some of the meat dipping below 135*F. Operator heated the ribs above 165* and moved some ribs to another container within a hot cabinet and moved the pan to an adjacent steam table and ribs were kept above 135*F. Corrective Action: Corrected at the time of inspection.

Observed a full hotel pan of potato salad within a fridge unit at 50*F. Operator was informed that cold-held food needs to be kept at or below 41*F, and keeping food in deep and long pans like a hotel pan can lead to a difficulty in keeping it within temperature. Fridge units were adjusted to colder temperatures and the potato salad was brought down to temp. Corrective Action: Corrected at the time of inspection.
