Observed baked quiche located in the hot holding unit with internal temperature of 103 degrees F. located during this inspection. Per operator, Item was placed in the unit, an hour prior to this inspection. Discussed with the person in charge that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Operator corrected by using times as control. Corrective Action: Correct at once.
