Inspector's notes

Observed cut tomatoes temping at 47°F in refrigerator by the door of the mobile unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Person in charge (PIC) stated the tomatoes were prepped and placed in the refrigerator at 10:30am. Refrigerator unit was temping at 40°F. Cut tomatoes were relocated to alternative functioning freezer unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed a spray bottle with a light purple liquid without a label indicating what the liquid is, hanging from the hand washing station. The person in charge (PIC) stated that the bottle was degreaser, and was informed that all toxic substances transferred from an original container to a spray bottle must have a label indicating the common name of the substance. PIC labeled the bottle as degreaser. Corrective Action: Corrected at the time of inspection.

Observed a shallow plastic bin with various vegetables stored on the floor of the mobile unit near the three compartment sink. The person in charge (PIC) was informed that foods such as vegetables, fruit, or other ready to eat food items must be stored at least six (6) inches above the ground. PIC moved the bin off the ground to a not-in-use steam table away from heating elements. Corrective Action: Corrected at the time of inspection.
