Observed cut cabbage and pork fat in refrigerated prep table both holding at holding 68 degrees Fahrenheit. PIC confirmed that they had only been at location and had food on unit for an hour. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were packed in coolers with ice by PIC at time of inspection until they returned to 41°F or below. Corrective Action: Corrected at time of inspection. PIC confirmed prep table was not holding properly and was being serviced in the next two days but they were waiting on manufacturer's repairman because it was still on warranty. PIC was not aware two items needed refrigeration and both were discarded at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed no soap at the handwashing station. The cart was already in operation. Alerted manager who ran back to his parked car to retrieve the soap, at time of inspection. Discussed maintaining soap, paper towels, and a trash basin near ALL the handwashing sinks. Handwashing sinks to be ALWAYS maintained unobstructed and accessible. Corrective Action: Corrected at time of inspection.
