Observed cut onions, cilantro, salsa, and cucumber within the interior of the fridge within the mobile unit at 63*F. The operator was informed that cold-held food must be kept at 41*F in order to prevent bacterial growth an ensure food safety. Operator placed additional ice within the fridge units to drop the temperature to an observed 38*F. Corrective Action: Corrected at the time of inspection.

Observed several flies outside of the unit on the salsa bar/assembly/beverage area. The operator assured that they use fans as a means of protection, but none were in use at the time of inspection. Operator was informed that pests such as flied must be controlled in areas where food is being handled and served. Operator set up fans which were observed to properly mitigate the presence of flies in the food area. Corrective Action: Corrected at the time of inspection.
