PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4614/AMC-Toolbox---Hot-Holding. -- Observed turkey sausage crumbles and cooked seasoned potatoes in hot holding unit with internal temperatures ranging from 98°F-125°F using probing thermometer. The person in charge (PIC) stated the items were reheated and placed in the unit approximately 1.5 hours prior to the inspection. At the time of inspection, the PIC added water to the hot holding unit, which reheated the potatoes and sausage crumbles to 165°F. Ensure TCS foods that are hot holding are maintained at a minimum of 135°F. Correct By: Corrected At Time Of Inspection
