Observed in use crema holding at 53°F, and large hunk of watermelon in fruit case holding at 65°F at center but below 41°F on exterior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were packed with additional ice to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed employees using wet wiping cloths over cutting boards to prevent them from becoming sticky and keep them in place while cutting. Informed employees that wiping cloths were not an acceptable food contact surface for use throughout the day and held food debris. Instructed PIC to remove cloths from cutting boards and exchange wiping cloths not held in sanitizer every 4 hours. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were removed from cutting boards and placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.
