PIC informed that theirs is expired, and they are currently working on renewing their certificate. #22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed shredded cheese, frozen potato fries (thawed), and a cut half head of lettuce with internal temperatures ranging 48*F-54*F. Internal temperature of the unit was 32*F, measured using min/max. PIC stated that the cheese and fries were placed in the unit 2 hours prior. PIC voluntarily discarded the half head of lettuce. Instructed PIC to move the cheese and fries into the commissary kitchen refrigerator to cool back down to 41*F. PIC moved the cheese and fries at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Observed Shredded cheese (61°F ) and since-thawed frozen potatoes (54°F ) in insulated shelf above 3 compartment sink. In refrigerator cut fruit (71°F ), eggs (68°F ), and cooked ham (67°F ) all found in refrigerator holding at 67°F. PIC said they were unsure how long the food had been out of temperature but being that it was the end of their shift the food was going to be thrown away anyway. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Bleach on unit being used for food surface sanitization was observed to be a scented laundry bleach. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Discussed importance of avoiding chemical additives in food surface sanitizers with operator. Operator was able to acquire additional bleach from commissary at time of inspection. 7-202.11 - Priority Foundation: Restriction-Presence and Use Addl Notes: Observed large cannister of ant insecticide on counter of mobile unit not currently in use. PIC did not have a licensed applicator contracted for the application of pest control and was storing pesticide on mobile unit. All pest control for the establishment must be performed by a certified pest control specialist and chemicals for pest control must not be stored onsite. PIC removed pest control chemicals from premises at time of inspection. Corrective Action: Corrected at time of inspection.

Observed central cold holding unit on truck holding at 67°F. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. PIC retrieved mechanic and was able to return cold holding unit to proper temperatures (39°F) at time of inspection. Corrective Action: Corrected at time of inspection.
