Inspector's notes
Power in unit went out for a short period, roughly 20 minutes. In this time, a meat and rice dish and plate of cooked vegetables dropped in temperature to 114°F and 125°F degrees, respectively. Operator was asked to reheat these items and did so with proper procedure at time of inspection. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Upon asking operator where they dump their wastewater and take fresh water, operator said they dump their wastewater at the nearby RV drain, and get water from a nearby permitted establishment. Informed operator that RV park drains are not allowed for wastewater disposal. Gave operator a new copy of the commissary form for them to fill out with the permitted establishment nearby to use for water and waste. Corrective Action: Correct at once.

MCEHC Chap. 8, Sec. 3, Reg. 5b - Mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations.
