Inspector's notes

Observed a deep container of red salsa in the refrigerator with 51*F in the center. Per person in charge (PIC) the salsa was made the previous day. Discussed with PIC cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Also discussed TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. Embargoed the red salsa and PIC voluntarily discarded at time of inspection. Corrective Action: Corrected at time of inspection.

Observed no commissary visit log available at time of inspection. PIC stated all prep is done in the mobile truck. Discussed with PIC that establishment should visit commissary on days when in operation. Discussed with PIC that all food storage and advanced food preparation must occur at approved commissary kitchen. All produce must be purchased commercially pre-washed or be washed in advance at a permitted food establishment/commissary. Produce may not be washed in the unit unless an approved prep sink has been installed. No prep sink observed in unit. Corrective Action: Correct prior to next routine inspection.

MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.
