Observed 2 reach in coolers containing TCS foods sitting outside the mobile unit. TCS cheese sauce, roasted peppers and cooked onions located in the hot holding unit outside the mobile unit. Two containers of Horchata with milk in igloo coolers outside the unit. Informed PIC that owner that mobile unit food preparation shall be simplified to reduce excessive steps where food may become contaminated. Excessive steps may include self-service of open food outside the unit. PIC moved all TCS foods into unit at time of inspection. Corrective Action: Corrected at time of inspection. **Second consecutive violation**

Observed staff washing, raising and putting the dishes away without sanitizing. Discussed with owner that sanitization is require after the warewashing steps of cleaning and rinsing so that utensils and food-contact surfaces are sanitized before coming in contact with food and before use. Owner corrected by setting up the sanitizer at the three compartments sink during the inspection. Corrective Action: Corrected at time of inspection.

Excessive steps may include, cooking, and self-service of open food outside the unit. Owner corrected by placing items inside the unit. Corrective Action: Corrected at time of inspection.
