Observed cold-holding unit in kitchen area next to friers/beef making station with an ambient temperature of 47F. Internal temperatures of butter sticks and liquid egg cartons reading 46F-47F. PIC stated items were placed in the unit less than an hour ago during shift change. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
