At the time of the inspection, there was a sanitizer bucket placed in the handwashing sink for storage. The handwashing sink shall be maintained so accessible at all times and not used for other purposes than handwashing. Person in charge removed the bucket from the handwashing sink. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed shredded cheese with an internal temperature of 45*F located at the cold holding well on ice. Per person in charge the cheese was removed from refrigeration and put on ice about thirty minutes prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Person in charge put the cheese on a time as control policy during inspection. Corrective Action: Corrected at time of inspection.

Observed an accumulation of grease and cooked pasta noodles underneath the flat top grill. Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Corrective Action: Correct prior to next routine inspection.

Inspector's notes
Person in charge could not provide a commissary visit log at time of inspection. Advised operator a commissary visit log shall be recorded, kept on the Mobile Food Trailer, and made available upon request. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 6d, 9d, 10e, 11d - Food preparation shall be simplified to reduce excessive steps where food may become contaminated. Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items. This prohibition does not apply to foods that have been prepared or packaged in permanent food establishments or commissaries meeting the requirements of this code. Addl Notes: Observed cooked pasta noodles with an internal temperature of 110*F located near the steam table. Per person in charge the noodles were cooling and removed from heat about thirty minutes prior to inspection. Discussed with person in charge that no cooling shall take place on the mobile food unit and must be done at the commissary kitchen. Instructed person in charge to reheat to 165*F for 15 seconds to maintain proper hot holding temperature of 135*F. Corrective Action: Corrected at time of inspection.

MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.
