At time of food truck operation, two employees without food manager certification. Provide food manager certification before next routine inspection. A Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Corrective Action: Correct prior to next routine inspection.

No disposable hand drying towels at handwashing sink. Hand drying towels were provided at time of inspection. Maintain all handwashing sinks stocked with hand drying towels at all times. Corrective Action: Corrected at time of inspection.

Inspector's notes

On prep surface, sitting at room temperature, cooked rice with internal temperatures of 55*F-65*F. Per employee, rice was prepared about one hour prior to event. Employee was instructed to reheat rice to 165*F and maintain hot at all times. Maintain TCS (time/ temperature control for food safety) foods at a hot holding temperature of 135*F or higher at all times. Corrective Action: Corrected at time of inspection.

Establishment did not have proof of site visit to commissary for food preparation, wastewater disposal, or clean water fill up before event. Maintain copy of commissary log, showing daily visits for food prep, either paper copy or picture on cell phone. Corrective Action: Correct prior to next routine inspection.
