Observed the gasket to the door of the reach-in prep table to be in disrepair. The door handle to the middle door needs to be repaired, as it was not closing properly. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. Corrective Action: Correct prior to next routine inspection.

PIC explained that all food kept in above cold holding unit and premade burgers were on time as a control and were not held for longer than 4 hours with 1 hour being the typical maximum amount of time. PIC did not have Time as a control documentation or any timers or labels to track which foods have been out for which times. Provided PIC with county documentation for creating a time as a control plan and provided advice for best practices going forward. Corrective Action: Corrected at time of inspection.
