Observed beef burger patties, raw shrimp, hot dogs, shredded cheese, deli ham, american cheese, sliced tomatoes and roasted green peppers salsa at 45-50 degrees. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed no commissary logs on unit at time of inspection. Informed PIC that 30 days of commissary logs are required to be available for inspectors to review. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 9e - MF Type III-All cooking, processing, preparing, grilling, assembly, storage, and service of any food or beverage shall be conducted inside the permitted vehicle. Addl Notes: Observed burger parries and bacon wrapped hotdogs cold holding in unit. Per PIC burger patties and hot dogs are prepared in his home kitchen Informed PIC all cooling, processing and preparation of food must be cone from the commissary on on the unit. PIC will discontinue prepping in home kitchen. Corrective Action: Correct at once. MCEHC Chap. 8, Sec. 3, Reg. 5b - Mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Addl Notes: Per PIC unit disposes of gray water and stores TCS foods at his home. Informed PIC gray water is only to be dumped at his approved commissary. All food storage should be done at the commissary or food should be purchased the day of service. Corrective Action: Correct at once.

MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.
