Observed Large container of guacamole cold holding un refrigeration unit with date mark. PIC explained the guac and other foods are brought onto the unit for service and then brought to commissary to be stored overnight and used for next service. Explained to PIC that all TCS foods brought onto the unit are required to be be discarded after every shift. Corrective Action: Correct prior to next routine inspection.

Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items.
