Observed no food manager certificate to verify that the person in charge is a certified food manager. Per the person in charge, they are certified food manage but could not locate their certificate at time of the inspection. Discussed having the certificate available at all times when operating and a Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Corrective Action: Correct prior to next routine inspection.

#21 — Proper Hot Holding TemperaturesPriority3-501.16

Inspector's notes

Observed TCS cooked food such as Musbi, with internal temperature of 124 degrees sitting in the warmer and breaded chicken bites with internal temperature of 120 degrees F., sitting under the hot lit. Per operator, these items were cooked and prepared 30 minutes prior to this inspection. Discussed with the operator that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. The operator corrected by turning up the warmer to 140 for hot holding, and will time as control. Corrective Action: Corrected at time of inspection.
