Inspector's notes

Observed TCS food items out of temperature including a pan of chicken at 46°F, a bag of precooked chicken at 48°F, shredded cheese at 51°F, and two pans of crab mix at 51°F. Per PIC, all food items arrived on truck at about 6pm. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Food items out of temperature were placed on ice baths to achieve required temperature. Corrective Action: Corrected at time of inspection.

Observed test strips meant for pH testing being used for sanitizer solution. Test strips are required for any sanitizers used with food contact surfaces. A test kit or other device that accurately measures the concentration in MG/L (ppm) of sanitizing solutions shall be provided. Accurate test kit/ device must be available. Provide sanitizer test strips prior to re-inspection. Corrective Action: Correct prior to re-inspection by 9/13/26.
