Inspector's notes

Observed cooked beef cold holding in small cooler temping at 60 degrees. shredded cabbage and sliced onions with cilantro cold holding in large cooler at 47 degrees. Shredded cabbage and sliced onions with cilantro cold holding over ice in food prep area at 78 degrees. Per PIC food was placed in cooler and food prep area greater than 2 hours prior to inspection. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
