Observed multiple metal pans stored in hand wash sink. Informed PIC that handwash sink must be unblocked and available at all times and used for handwashing only. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. PIC relocated all items blocking handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

observed raw sausage stored above sliced American cheese that required refrigeration, sliced melon, cooked, Ice used for drinks, and chicken nuggets. Informed PIC that all raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature. Corrective Action: Corrected at time of inspection.

Observed milk, chocolate milk, yogurt parfait, cut melon, sour cream, sliced American cheese that requires refrigeration, chicken patties, chicken nuggets, cooked beans, cooked pork, cooked chicken, French fries, cooked salsa, deli ham, raw sausage, shredded Mexican blend cheese, raw beef cold holding in the only refrigeration unit at 49-87 degrees. Per PIC food was placed in the refrigerator this morning greater than 2 hours prior. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed the only refrigeration unit with an ambient air temperature of 75 degrees. Informed PIC that cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. A mechanic was on site and repaired the unit. The unit has been returned to proper working condition and is now able to maintain TCS foods at 41°F or below. Corrective Action: Corrected at time of inspection

Observed cooked pork, cooked beef, and cooked chicken being stored in grocery bags. Per PIC food was placed in bags at the end of the day. Informed PIC that the use of non-food grade bags (including to-go bags and trash bags) is not approved for storage of open food items to prevent migration of deleterious substances. PIC will no longer store food in grocery bags. Corrective Action: Corrected at time of inspection.

Observed Observed multiple TCS foods stored in a cooler with no ice. Informed PIC that all food must be stored in a mechanical refrigeration unit. Coolers are only to be used to store Non-TCS foods. Corrective Action: Corrected at time of inspection. MCEHC Chap. 8, Sec. 3, Reg. 6d, 9d, 10e, 11d - Food preparation shall be simplified to reduce excessive steps where food may become contaminated. Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items. This prohibition does not apply to foods that have been prepared or packaged in permanent food establishments or commissaries meeting the requirements of this code. Addl Notes: Observed multiple TCS foods stored in refrigerator. Per PIC food is leftover from todays service and being saved for next week on Monday. Informed PIC that no food is to be carried over from one days service to the next. All food must be used or discarded after service. PIC discarded food at time of inspection. Corrective Action: Corrected at time of inspection.
