PIC also did not know where probing thermometer was and acquired additional one, and was educated since there was no more food leftover from service on the truck and thus no food temperatures to take.

Observed bucket with dirty water sitting in hand sink basin when inspection began. Facilities must be maintained in a condition that promotes handwashing, including but not limited to keeping objects from blocking the hand sink. PIC relocated all items blocking handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed no test strips on truck at time of inspection. Test strips are required for any sanitizers used with food contact surfaces. PIC acquired test strips during inspection to satisfy requirement. Corrective Action: Corrected at time of inspection.
