Observed 138-148*F with a min/max in the hi temp dish machine actively being used at time of inspection. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. The 3-compartment sink will be utilized in the meantime. In person reinspection will be on Wednesday, February 25th. Corrective Action: Correct prior to re-inspection.

Observed dishwasher omit excessive water after use cycles with a bus tub under the machine. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. PIC stated the dishwasher has bad sealant to entrap all the water during the use cycles due to hard deposit buildup. PIC stated they have already submitted a ticket for repair and the dishwasher machine needs to be completely replaced out. Corrective Action: Correct prior to next routine inspection.
