Observed brown gravy in reach in refrigerator at a temperature of 45-52*F. As per staff the item was prepared and placed into reach in cooler the day before. Cold hold of food to be 41*F or lower. Gravy was discarded. Advised staff to not tightly cover containers when cooling and to verify food has cooled using a metal stem thermometer. Correct By: Corrected At Time Of Inspection
