Inspector's notes
Observed 51°F temperature of milk inside reach-in cooler. Observed 51°F ambient air temperature of reach-in cooler, per min/max thermometer. Observed 54°F notation for 8:30am on day of inspection on temperature log for reach-in cooler. Per Person in Charge (PIC), employee took note of temperature from temperature gage and notified another kitchen staff employee. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All milk improperly cold held was relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Food establishment has sufficient cooler capacity to operate until reach-in cooler is repaired. Recommended to PIC training kitchen staff on critical food safety temperatures and accountability procedures for temperature logs. Corrective Action: Corrected at time of inspection.
