Inspector's notes

Observed accumulation of dust along vent covers of ceiling refrigeration unit inside meat market butcher room. Physical facility shall be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Establishment shall clean vent covers at frequency that prevents accumulation of dust/debris. PIC instructed employee to clean vent covers. Corrective Action: Corrected at time of inspection. 6-501.11 - Core: Repairing -Premises, Structures, Attachments, and Fixtures-Methods Addl Notes: Observed bowing wall panels and large gaps of exposed wood inside sea-food walk-in cooler. Observed cove basing separated from bowed wall panels of sea-food walk-in cooler. All floors, walls, and ceilings shall be maintained in good repair and repaired such that it is smooth and easily cleanable. Establishment shall repair sea-food walk-in cooler walls and cove basing prior to next routine inspection. Discussed importance of walk-in maintenance and non-food contact surface cleanability with Person in Charge (PIC) and meat market staff. Corrective Action: Correct prior to next routine inspection.
