Observed several areas around the kitchen that required cleaning due to buildup of organic matter. Operator stated that one half of the subletted unit has not been in use due to a terminated contract, and the subletted tenant has not removed their food items accordingly. Operator stated that the tenant has until 07/30 to remove all items, and after it will be taken care of if negligent. Corrective Action: Correct prior to the next routine inspection.

Observed chicken strips in hot holding unit measuring 130*F. When asked how long food items had been in hot holding unit, the person in charge stated they had been place there 20 minutes prior. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher. Person in charge reheated food items to 165*F and hot held at 135*F at time of inspection.

Observed establishment to have put in hand sink and prep sink in back corner of Mexican Grill. Plumbing for hand sink and prep sink is connected and goes into wall. PIC stated units were put in about a month ago. Upon inspection, a remodel has taken place which may require an application and plans to be submitted, and/or additional permits. Please submit an application, supporting documentation, and fees within 5 business days. Provided PIC with application. PIC applied for remodel by end of inspection.
