During time of inspection, did not observe any quat or chlorine sanitizer test strips. PIC obtained chlorine test strips. Advised PIC to obtain and store sanitizer test strips inside the establishment, so that the sanitizing solution can be tested. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed packages of hot dogs (44°F, 47°F, 49°F, 59°F, 60°F) and 2 containers of prepared bacon wrapped hot dogs (45°F, 44°F) all observed reporting over 41°F in reach in refrigerated prep-table. Hot dogs located in top section of cooler reported well, while those on floor of unit reporting increasingly warmer towards the floor. Hot dogs had been placed in unit the day or night prior for next days service. Ambient air temperature coming from cooler was observed at 41°F even after repeated opening. Cause of warmth along cooler floor not identified, but some mechanical issue causing warmth along floor of refrigerator suggested. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed one of the hands washing sink located by the dry storage rack, not easy assessable for hand washing frequently due to a refrigerator and a storage rack on both sides of the sink. Discussed with operator that the hand washing sink shall be maintained easily assessable at all times to encourage hand washing frequency. Per operator, they will be rearranged. Corrective Action: Correct prior to next routine inspection.

Prep sink does not have FRP on surrounding wall. Install FRP in these areas prior to next routine inspection. Observed countertop in kitchen to be warping and have damage rendering the side areas not smooth nor easily cleanable.
