Observed wiping cloth in sanitizer bucket with a chlorine concentration of 25ppm. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Approved sanitizer concentration for chlorine is 50-100ppm. Corrective Action: Corrected at time of inspection.

Observed cut tomatoes and lettuce in prep fridge unit to temp at 47*F. Person in charge stated items had been in the unit since the day prior. Unit ambient measured 47.1*F. Instructed person in charge to not put any TCS/RTE food in unit until it is repaired. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
