Observed multiple cans of food (tomato sauce, mushrooms, etc.) with severe dents affecting the seams throughout multiple aisles. Informed person in charge (PIC) that swollen, rusted and cans dented on any of the 3 can seams (top, bottom, side) or deep, sharp dents should be considered unsafe. PIC separated the damaged cans. A designated area will be used to store damaged cans until removal from the establishment. Repeat violation: 2nd. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed a display island refrigeration unit with ambient air measured via min/max thermometer between 44°F and 46°F in different areas. Multiple packages of cream cheese were opened and observed to be with internal temperature of 48-49°F. Person in charge (PIC) stated the cream cheese has been stocked in this particular unit over 4 hours ago and cannot determine when cream cheese entered the temperature danger zone or how long they've been in it. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was the internal temperature control system (verification breakdown), which resulted in the violation. Corrective Action: Corrected at time of inspection.
