Observed separated/missing caulking along with black organic matter on existing caulking along the hand was sink on the prep table, the prep table, three compartment sink and the mop sink. Discussed with Person in Charge (PIC) all fixed equipment shall be spaced enough away from the wall for proper cleaning or be sealed with caulking to create a smooth and cleanable surface to prevent the accumulation of contaminants. Corrective Action: Correct prior to next routine inspection.

Observed a frozen liquid buildup in the dessert freezer in the back of the kitchen near the office. Discussed with PIC to address the leak and clean up the frozen liquid buildup to prevent contamination of foods and to keep from storing foods under the leak. >>>Observed at the customer self serve reach-in refrigerator by the restrooms to have several TCS items at an internal temperature of 48*F to 50*F. Ambient air temperature of cooler was registered at 48*F with a min/max thermometer. Discussed with Person in Charge (PIC) except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per PIC the TCS items were just delivered and stocked 2 hours prior to inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Discussed with PIC to not utilize the unit for TCS items until it can maintain an ambient air temperature of 41*F or less. TCS items are vanilla milk chugs, chocolate milk chugs, chocolate protein shakes, whole milk half gallon, strawberry milk half gallon, bacon, raw shelled eggs, butter, naked juices: green machine and strawberry banana. Corrective Action: Corrected at time of inspection.

Per PIC, items were placed in cooler less than 4 hours prior to inspection. PIC relocated to other coolers to rapidly cool to 41’F or below at time of inspection. Ambient minimum air temp was measured with max/min to be 51.8’F. PIC will discontinue use of cooler until repaired. Adequate other refrigeration is available. Discussed proper cold holding. TCS foods held cold must be maintained at 41*F or below at all times. Correct By: Corrected At Time Of Inspection
