Raw chicken was observed to be 35F - 37F in walk in at time of inspection.

Observed boxes and containers of raw chicken in walk in cooler with an internal temperature of 48°F - 50 °F. Ambient temperature of walk in cooler was at 51°F. according to inspectors min/max and built in refrigerator thermometer. Per PIC the walk in cooler door does not self close, and left open for prolonged periods of time. All TCS foods improperly cold held were relocated to freezer to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. The internal temperature of the chicken was later observed at 46°F and dropping. Corrective Action: Corrected at time of inspection.

All TCS foods (raw chicken) was relocated to alternative functioning units (freezer). PIC submitted work order to get walk in cooler repaired. Advised PIC to not use walk in cooler until it can hold an ambient temperature of 41F or below. PLEASE REPAIR WALK IN PRIOR TO RE INPSECTION WITHIN 24 HOURS. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling. ------- In the walk in cooler, observed 2 large covered and stacked metal containers of cooling raw chicken wings measuring 58-74*F internally when measured with a probe thermometer. The inspectors and establishments thermometers were calibrated at the time of inspection. Observed the containers tightly packed with 6-8 inches thick of wings. The cook stated they had defrosted two cases of raw wings in the food prep sink under cold running water for approximately 1 hour at 10am (observed at 3:00pm). Discussed that foods prepared with ingredients from cold or frozen ingredients should be cooled within 4 hours to 41*F or less. Cool most efficiently in shallow, uncovered pans in walk-ins, reach-ins or freezers. Advised PIC to actively monitored rapidly thawed foods using running water to ensure they are removed from the water upon reaching 41*F. Observed another case of chicken prepared at the same time from already defrosted chicken that measured 41*F or below. Since the chicken did not cool in the allotted 4 hours, the manager voluntarily discarded both containers of raw chicken wings at the time of inspection (see embargo).
