Conducted an onsite re-inspection for priority foundation violations noted on previous routine inspection. Observed the prep cooler by the cook line was maintaining minimum ambient temperature of 30F in both the upper and lower compartements. TCS foods stored in the prep cooler had internal temperatures less than 41F. Observed establishment has obtained quat-sanitizer test strips and are retained in the establishment for use. Observed a cover plate has been installed under the back door to seal the gap opening to the exterior. The person in charge at the time of re-inspection was a certified food protection manager and made additional staff certifications available for review by posting them in a clearly visible area. Verified establishment continures to have ample supply and peak capacitiy of hot water. Observed the establishment has performed cleaning under and around equipment on the cook line, the ventilation hood, walls and other areas of the establishment. Observed establishment has begun to repair crack gaps, and holes, in the walls. Establishment has plans for new construction/remodel and will continure to address physical facilities repairs as part of the remodel.Discussed continued cleaning and repair of premises, discussed submitting a new construction/remodel application prior to initiating the remodel.
