Inspector's notes

Observed prep cooler across from fryer with ambient air temperature measuring 56°F. Calibrated thermometer with cook. Internal temperatures of TCS food items measured between 52°F -56°F. Cook was unsure of how long items had been out of proper cold holding temperature range. See embargo form for list of TCS food items discarded. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. A service technician was called to service unit. Kitchen staff will use other properly working prep cooler or walk-in cooler until unit has been serviced and maintains an ambient air temperature of 41°F or below Corrective Action: Corrected at time of inspection.

Observed cooked beans and mashed potatoes missing date marks in walk-in cooler. Per the cook, items were made on Friday. Date marks were added at time of inspection.
