Observed deli employee disassemble both slicers for parts cleaning at 3-comp sink. Employee washed correctly, but quat mixing device found to be out of calibration producing 0ppm at time of cleaning. Discussed and demonstrated mixing sanitizer by hand until repaired. Corrective Action: Corrected at time of inspection.

Observed two deli slicers to have an accumulation of food debris, deli staff stated slicers had not been cleaned since 7am and were due for a cleaning. Deli staff member cleaned slicers with a wipe down and spray at time of inspection but left a large accumulation of food debris after cleaning was complete. Discussed disassembling slicers and cleaning parts in the 3-comp sink with a wash rinse and sanitize every 4 hours. Corrective Action: Corrected at time of inspection.
