Observed chicken tenders and fries/ 111-115°F below heat lamp at the buffet. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. According to the PIC the foods were cooked an hour ago prior to hot holding under the lamp. PIC voluntarily discarded TCS foods. Discussed utilizing 4 hour time as public health control if holding TCS foods in the danger zone. Corrective Action: Corrected at time of inspection.

Observed milk in the small glass door refrigerator near the soda fountain with internal temperatures between 49-52°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge it was determined the milk had been in the refrigerator for more than 4 hours.
