In the prep refrigerator across from the fryer observed chopped cabbage/48°F, sliced tomatoes/48°F, shrimp enchiladas/55°F, chicken enchiladas/55°F, Pico de Gallo/48°F, Chihuahua cheese/48°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge it was determined all TCS foods were in the prep refrigerator since 11AM. All TCS foods improperly cold held were moved to the walk-in refrigerator. Corrective Action: Corrected at time of inspection. Repeat Violation: 2nd.

Observed two large cambros more than 4 inches deep of cooked enchilada sauce cooling in a water bath in the walk in refrigerator. The Internal temperature of the enchilada sauce ranged from 70-144°F from the edges to the center of the sauce.

Predefined Comment: Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Hands must be washed when switching between working with raw FOOD and working with READY-TO-EAT FOOD. Predefined Comment: Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

In the prep refrigerator across from the fryer observed chopped lettuce/50°F, sliced tomatoes/47°F, shrimp enchiladas/48°F, Pico de Gallo/46°F, Chihuahua cheese/49°F. Ambient temperature of unit measured at 50.2°F with min/max thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge it was determined all TCS foods would be discarded as the exact time TCS foods were stored above 41°F could not be determined immediately. All TCS foods improperly cold held were discarded by PIC at time of inspection. Technician serviced prep refrigerator at time of inspection. Ambient temperature measured at 39°F after repair. Corrective Action: Corrected at time of inspection.
