Observed precooked chicken and steak stored in the cooler drawer under the flat top grill. With inspector probe thermometer the chicken measured 75*F and the steak measured 73*F. Chef stated that the product was cooked off 1 hour prior to inspection. Chef removed product to shallow pan and then placed in walk-in cooler to continue the cooling process. Discussed with Chef that when cooling TCS products they should be cooled in walk-in cooler until product reached 41*F or below then the product can be moved to cooler drawers. Corrective Action: Corrected at time of inspection.
