Inspector's notes

Inside kitchen main double door fridge, observed sliced American cheese, ham, string cheese, and cup yogurts 45-49*f degrees. Per kitchen manager door had been opened many times throughout shift. Food verified 37*f degrees before lunch service. All items moved to outside double door fridge to cool. Fridge verified down to 41*f degrees by the end of the inspection. Corrective Action: Corrected at time of inspection.

Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
