Inspector's notes

Observed inside main walk in unit with cut lettuce and cut tomatoes cooling from 9am. stocked 1 x 4 each in medium to large containers and covered. Time of inspection is after 2pm. Calibrated thermometers. Internal temperature of cut lettuce at 46*F-50*F with inspector and establishment thermometers. Internal temperature of cut lettuce at 44*F-50*F. Notified Person In Charge (PIC). Per time marker all of listed tcs foods prepared at 9am. At 1pm all tcs foods needed to be at 41*F or below. Ambient temperature of main unit is 41*F-42.9*F with min/max thermometer. PIC voluntarily discarded 4 containers of improperly cooled cut lettuce and 3 containers of cut tomatoes. = Corrective Action: Corrected at time of inspection.
