If carboys are used they are to be wash, rinsed, and sanitized in the three compartment sink after each use.

Inspector's notes

Observed an oven, a refrigerator, and the ice machine in non-working order. Non-functional equipment makes it difficult for staff to perform their duties and could pose food safety risks. Staff are, currently, requesting small quantities of ice from other nearby schools to calibrate thermometers. The establishment must fix and maintain all equipment in the kitchen. Corrective Action: Correct prior to next routine inspection.
