Inspector's notes

All food items in walk-in cooler were found with internal temperatures of 44-55*F; temperatures verified with PIC's and inspector's calibrated probe thermometers. PIC stated the walk-in was checked around 6:30 AM today and was noted to be around 50*F. They closed the door and monitored it to see if it would cool down. Inspector arrived around 9:00 AM and saw the ambient temperature at 52*F. Temperatures on all food items were around 50-55*F around 9:30 AM and some liquid eggs were found nearest the freezer door (which was propped open soon after intially entering the walk-in) with internal temeprature of 44-47*F. PIC discarded all TCS food items in the walk-in (see embargo form).

Inspector's notes

Walk-in cooler found with ambient temperature of 51-52*F. PIC stated the cooler was found with this temperature around 6:30 AM today. The door was kept shut until about 9:00 AM when inspector arrived and found the walk-in to still have an ambient of 51-52*F. PIC contacted repair technician. Repair tech arrived and started diagnostic. Repair tech discovered the thermostat had been moved to 60*F. Repair tech adjusted the thermostat and ambient temperature in the walk-in was able to drop below 41*F. Please continue to monitor temperature of the walk-in and ensure ambient temperature is maintained below 41*F.

-- In walk-in refrigerator, spicy chicken strips had prep date mark label of 08/09 on the container. The person in charge stated the label is incorrect, and the chicken strips were thawed from frozen/prepped on 08/17 with ready-to-eat (unfrozen) date of 08/18. All RTE/TCS foods were properly date marked at the time of inspection. Discussed with PIC ensuring employees are removing old labels from cleaned/sanitized containers before placing new product in them. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). -- Observed quat sanitizer solution dispensing at levels well above 400 ppm at 3-compartment sink. Buckets and shake mix sanitizing containers were set up throughout the kitchen with concentration levels exceeding 400ppm using quat test strips. Reviewed quat concentration ranges: must be between 150ppm and 400ppm. Sanitizer was diluted by PIC to approved levels at time of inspection. Discussed with PIC placing a work order to adjust/calibrate dispenser so that it dispenses quat sanitizer between the levels of 150ppm-400ppm. Employees will continue diluting 3-compartment sanitizer compartment and sanitizer buckets with water until repairs are completed. Corrective Action: Corrected at time of inspection.

Walk-in refrigerator temperature measured at 40.8°F using min/max thermometer. At the time of inspection, all TCS items were uncovered and relocated closer to walk-in freezer to rapidly cool to 41°F.
