Observed Raw ground beef (57°F), BBQ Pork (57°F), Milk (55°F), lettuce (56°F), Ranch (55°F), shredded cheese (57°F), cut onions (57°F), and cut tomatoes (55°F) inside walk in refrigerator at time of inspection. All TCS foods which had been in the unit overnight were embargoed (see embargo list). The walk in refrigerator measured at 55.7°F with the min/max thermometer. Manager will place TCS items in the nearby standing refrigerator until the walk in refrigerator can maintain temperatures below 41°F. Discussed cold holding requirements. Corrective Action: Corrected at time of inspection.

Observed walk in cooler measured at 55.7°F with the min/max thermometer. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Establishment can not store TCS items inside walk refrigerator until the unit can maintain 41°F or below. Establishment will utilize freezers to cold hold TCS items. Corrective Action: Correct within 48 hours.

Observed diced tomatoes (50°F), sour cream (50°F), salsa (51°F), and shredded lettuce (52°F) sitting in an ice bath, which barely reached the bottom of the food-containing metal pans. Alerted staff who stated they had placed the food out less than 1 hour before the temperature measurement. Staff added more ice and water at the time of inspection. The ice slurry must reach the level of the food inside the containers to be effective. Discussed cold holding with staff. Corrective Action: Corrected at time of inspection.

Observed hot dogs (100-102°F) hot holding in a warmer under 135°F. Staff stated the hot dogs were placed in the warmer at 10 this morning (see embargo). Except during preparation, cooking, cooling or when time is used as a control, all TCS foods must be maintained at 135°F or above. Discussed routinely checking hot holding temperatures. Staff to ensure equipment used for hot holding remains in a setting for continuous heat so that it does not time out and turn off during use. Corrective Action: Corrected at time of inspection.

No certified Food Manager was present at the time of inspection. In Compliance with the Food Code, Maricopa County requires a Food Manager present during operating hours. Emailed Maricopa Policy changes and additional resources on where to acquire a Food Manager Certification. A Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Corrective Action: Correct prior to next routine inspection.
