Inspector's notes
Observed reach on refrigerator up front (Used to store catering orders) measuring with an ambient temperature of 49 degrees F. All food stored in the refrigerator had been prepped with the hour and was moved to alternative refrigeration. Refrigerator will be used to store TCS food items until in good repair and able to maintain temperatures at or below 41 degrees. Discussed appropriate cold holding temperatures and checking equipment regularly. Refrigerator is not required for flow of business, available refrigeration/space in walk-in cooler Corrective Action: Corrected at time of inspection.

Observed penne pasta in back prep station at 45*F above fill line of container in sandwich prep cooler. Pasta beneath fill line were observed to be 41*F. As per the person in charge the refrigerator was just stocked approximately 1 hour prior to inspection. Cold hold of food to be 41*F or lower. Items were placed in bottom portion of refrigeration unit. Observed shredded lettuce and sliced tomatoes at sandwich pre line at 45-47*F. As per the person in charge prep line was stocked at approximately 9:30 am. Item were placed in separate cooler that had ambient temperature of 38*F. Advised person in charge to use time as control until refrigeration is fixed. Time as control may be used on tuna salad, sliced tomatoes, shredded lettuce, olives, pepperoncini and jalapeno peppers. Advised staff to use metal stem thermometer to verify cold hold foods are at 41*F Corrective Action: Corrected at time of inspection.

Observed that the ambient temperature in sandwich prep cooler was holding at 45*F (max/min thermometer) Temperature control for safety foods were time stamped to discard within 4 hours of use. As per the person in charge, table was stocked approximately 30 minutes prior to inspection starting. Person in charge completed work order for repair, will return for reinspection on 8/18/2025
