-- Cheddar cheese sauce in hot holding dispenser measured at 95°F using probing thermometer. The PIC stated the cheese was removed from warmer and placed in the dispenser about 2 hours before the inspection (9:00 AM). At the time of inspection, the cheese sauce was discarded. The PIC noticed the unit was turned off. After turning unit on, the temperature was able to maintain hot holding temperatures for new bag of cheese sauce. Ensure TCS items hot holding are maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

The person in charge (PIC) stated the cheese was placed in the unit approximately 3 hours prior to the inspection (1:00 PM). At the time of inspection, the PIC placed a time control sticker on the cheese and stated the cheese will be discarded if it does not sell within an hour.
