-- On make line, observed Pico de Gallo with an internal temperature of 61°F using probing thermometer. All other TCS items holding at or below 41°F. The person in charge stated the Pico de Gallo was removed from the walk-in refrigerator and placed on the line approximately 1.5 hours prior to the inspection. At the time of inspection, an employee placed the container of Pico de Gallo under an ice bath to rapidly cool to 41°F. Verified towards the end of the inspection temperatures decreasing. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

-- Observed multiple chemicals/sanitizers such as floor cleaner and peroxide being stored above gloves and napkins in dry storage area. No visible contamination observed. Chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. Requested all chemicals be relocated and properly stored by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
