Inspector's notes

Observed cooked rice cooling at room temperature. The rice measured with an internal temperature of 72 degrees F and was prepared less than 2 hours prior to inspection. Instructed PIC to move the rice to walk-in refrigerator to expedite the cooling process. Active cooling starts when the cooked product is approximately 135 degrees F. Observed cooked chicken wrapped in tortillas and stored in container with plastic wrap and a lid securely on the container. The cooked chicken measured with an internal temperature of 62 degrees F and was prepared 3 hours prior to inspection. Observed cheese, and cheese and jalapeno banditos prepared on 5/29/2025 in reach in cooler next to grill at 47*F - 50*F. Banditos were embargoed and discarded. Observed chicken and beef banditos in same refrigerator at 47-49*F. As per the owner, these banditos were prepared less than two hours prior to the inspection. Banditos were placed in walk in cooler to cool back to 41*F. Advised staff to monitor cold hold temperatures after preparing and portioning foods. Corrective Action: Corrected at time of inspection.
